Changing the Payee name is not a problem. I've also done that. You can do it by contacting the Google support Via email. Payee name cannot be changed through your account options. You need to contact Google.
Even I think you cannot change it but may be some specific reason to get your payee name changeable. I would recommend you tried contact them first and do not expect too much. Just send them a message with politely approach and give them an explanation why do you need to change it.
One Thing Keep in Mind these days google is not give you adsense easily do not go for payee names this is not million dollars that you need on your name for fame ... good day
