Optimizing my page and it looks a little something like this

    h1 Apples h1

    h2 Red Apple Recipe h2
    h2 Red Apple pies h2
    h2 Red Apple Uses h2
    h2 Red Apple treats h2
    h2 Red Apple cooking h2

    h2 Green Apple Recipe h2
    h2 Green Apple pies h2
    h2 Green Apple Uses h2
    h2 Green Apple treats h2
    h2 Green Apple cooking h2

all of the h2 tags is followed with some content, maybe 1 paragraph long. Is this overkill or ok to be done ?

Think of the h1 tag as the main title heading at the top of the page and the h2 tags as sub headings that are larger than the standard body text and you will be fine.

Yea I know this, but I am wondering in case of the keywords, if this would be considered keyword stuffing ?

Depends on h1 versus regular text. It can be considered stuffing/spamming and if not each will be dis valued. You should select a main keyword/title and use h1 and maybe use a h2 for a sub-title but leave it at that. Anything over that will be ineffective so don't do it.

As long as it makes sense for your readers then its not keyword stuffing.
