How do I optimize each of my blog posts for the search engines? Also does anyone know how to rename your alt tags in the images?

when you realize that one post on your blog is attracting more traffic than others is to spend some time analyzing the source of the traffic.

It all depends on which keyword you select and use it to spread it around your post. You might want to make sure your main keyword density is something like 4-6% to ensure it doesn't look something like a spammy blog post.
