I'm planning to buy a domain and develop a website for it. It is my local town and it is like "Something Bay". The website will be a guide to the town like showing some history, articles, general info about the town, places to stay and photos etc. There are two options that I could register: Something-Bay.com or SomethingBay.org Which one would you choose?
It makes no difference for SERP's, but in this case I would go with the .org. A lot of towns official sites use the .org and I think it will help your ctr on searches as people will be more apt to click thinking it is an official site.
If i can, i will take a look on other .com combination (if any). If i can't find a decent one, i'll take the .com hyphen as the last option.

Whether you choose the org or hyphenated com, there is possibility of traffic leak to the non hyphenated com.
Without the hyphen but if you can get them both do it. Type rate errors are not something we must not leave aside. I usually take 20-30 names for one name for my customers (typos, other TLDs ....)
for your purposes, i'd use the .org but reserve both. if somethingbay.com is already out there, i think somethingbay.org looks like a legitimate alternative and i personally would remember that it is a .org.
if its a small money site then go with the - if its something you want to work on go with the .org. in my eyes i would trust a .org more then a - .com also whats your banner and design going to look like you going to go with visits something-bay.com or something bay . org seo value i would go with the .org
i agree that trust is an important factor here and i would trust .org more too. also, does the hyphen make sense where it is? for example, SanFrancisco-Bay.com SanFranciscoBay.org
thanks for the great feedback everyone and it helps to get others perspectives on it since many people will hopefully use the site and everyone has a different view point. In the end I decided to go with the .org which was also my slightly favored option from the start.
