If I have a spike in traffic (approx doubled) for the last couple of weeks, how important is it to notify Adsense of the increase in page visitors??

if a spike is few weeks old, its probably too late to notify them. and you dont need to do that.

They already know about it. No need to notify them

I think there's nothing wrong with spike in traffic, as long as it comes from search engine and organic traffic

but you should worry if there's spike on clicks

There is absolutely no need to notify them. As long as these are legitimate visitors, there should be no trouble. :)

Its okay you don't need to notify them, unless you see a lot of unexpected clicks.

No need to contact adsense at all..I guess they don't bother if the traffic is not coming from any paid traffic network site

adsense looks to that and laughs. they only care for people with millions of hits a minute like youtube for an example. Simple individual sites do not need this action

You do not need to contact adsense if your traffic is increased, no matter how much the increase is.
