I am fed up with poor quality DNS service at 1&1. I waited over 72 hours for them to update their system after I entered a new IP so I can access my VPS by name, and the new IP has still not updated in the sub-domains you're required to set up as nameservers. This is after several emails and a call to support. Please can someone recommend a free, cheap or good (two out of the 3 required ) DNS service that will allow me to set my own nameservers for domains I own at 1&1? I've tried Googling and can find a lot of companies offering this service, but I don't know where to begin.

You can try following DNS service. They will allow Free DNS for 5 domain https://www.dnstrouble.com/anycast/
If you want to get good performance and also the pricing is also less then you can do this by host gator. But you have to wait for them to provide some offers about this.
Amazon Route 53 is a reliable DNS hosting solution. Also, most other domain registrars offer DNS management.
