Is it a new site? Google often gives new sites a boost in SERPs and then after a short time you'll settle into where they think you really should be and it's then up to you to build your way back up with quality relevant backlinks and good unique content.

Relevant backlinks along with quality unique content, you should be back up in the search results. Also, try to avoid overly competitive niches and keywords, concentrate on long-tail keywords if you're in a competitive niche

I have the same problems with googles tools. It'll show me as #5 or something like that for a particular search and then I show up at #1 instead of #5. Sometimes it's the other case where it says I'm #1 and instead I'm #5. I wouldn't worry about that too much. Those search results are constantly changing every day as google gets more content indexed and the google tools info is only updated every week or so.

Your site is new so you the ranking will be up and down a lot. Google give a New Content Boost to new pages and new sites, this boost helps them rank high in search results. But this boost is only temporary. So to get a stable position in SERPs I suggest you build some backlinks and keep site's content updated.
