This dish is from meat of rat in field and others for processing into many delicious and exotic dishes. But, in Vietnam , they only use rat in field , because this is a rat eating rice so meat is delicious and clean. Normally, in Vietnam, catching rat often takes place after each harvest. So, field is no place to hide and rat has become prey for professional hunters throughout Northern villages and the Mekong Delta region of Vietnam. In Vietnam, rat is processed into many dish depending on local, customs and hobby of homemaker. It is argued that in the context of the famine in 1945, or the lack of food in the subsidy period, thus, rat is used as food. In fact, to date, many locals of Vietnam are still using rat meat as one of the popular and special dishes. Even, some localities in The North of Vietnam such as: Tu Son town (Bac Ninh city), Thach That district, Hoai Duc district(Hanoi city). In those place, rat meat is an integral part on trays in ceremony even in wedding. 1kilogram of rat meat after processed costs about $ 4 (2013). Hundreds of dish from rat meat are special about flavor and how to do that creat a small part but extremely diverse for cuisine of Vietnam. Initially, I make sure you will feel terrible when seeing rat, but, try to enjoy this dish, I am believe that it is totally opposite to what you see.
I am curious why you want this particular piece. I was relaxing after work and re-wrote it for you pretty quickly. But without knowing the purpose, or wanting to do my own research, it is just that - a re-write of your piece in, what I consider, a slightly more readable piece. My parents went on a culinary trip to Vietnam earlier this year. They loved the food, and I would bet money they never ate any rat. Personally, I have no desire to eat rat, no matter how well prepared or delicious it might taste. I realize that much of what we think is good or bad to eat is just a cultural or personal preference. My happens to be, "rat free is the way for me!" I don't really think very much of this piece, even my version, and can only see a limited value and few uses for it. That being said, here it is:
