Healthcare . Debt management . Entertainment Service Lab for Bio test . just some example .
The publicly listed companies should have their returns available online so you can check them. Private companies are harder to measure. When you talk about profitable are you referring to return on investment? or the straight pounds value? Its entirely possible that a very small company could be the most profitable but because of their niche it can't scale up to provide massive returns - but the ROI is still huge.
Well it depends how much capital you have to start a business, skills other resources etc. Assuming you have little then I suggest either starting an agency, a dealership or some sort of web based business. An agency is a great one because you basically act as a middleman but for services so you don't get your hands that dirty and have the potential to make quite a lot of money. So you could be a recruitment agent for something niche, say chefs. You advertise for chefs get them on your books and then advertise that you have great chefs available....
