Build back links and high PR back links. You can also build back links on websites having .it extension to boost your keywords in Google.it
Since you have the .it extension you needn't do anything further to associate your site with Italy: the extension takes care of that. To rank it in Google.it, you need links from Italian sites (i.e. those physically hosted in Italy and/or having the .it extensions). Italian links are a big priority for you, and everything else is standard SEO (though your language will presumably be Italian in this case, all the general SEO principles apply).
