Hi - can anyone help - I am having plenty of click-throughs to my website but no business through it - any ideas how I could improve it?

I would look at what the site is listed in search engines as. You are selling trukish villa holidays so make sure it has turkish holidays or keywords for that.

If site shows up for uk holidays everyone is expecting Uk rental not turkish one.

The layout of the site probably has something to do with it, too. When I brought it up, I wasn't quite sure what I was looking at or where to go from there.

I'm not an expert at this by any stretch of the imagination, but one of the key rules I've seen repeated is to not make your visitor search for how to spend their money. Put the option to buy somewhere prominent so they'll see it.
