I've just got a job making a site for a friend's holiday house. Personally I am thinking that all it needs is a nice clean template, a good thumbnail photo viewer, a calender to show available dates and then relevant info about the area , contact details, etc. Any recommendations regarding templates, good photo viewers, past experiences with this type of project would be much appreciated as I am relatively inexperienced.

    * I really like the photoviewer they use here... house isn't bad either http://www.luxuryrealestate.com/1016347

Regarding the calendar - get the owners to sign up with Roamfree. It takes a huge amount of the work off your hands as the website developer. I manage a few sites for small hotels, and they all love Roamfree, and from a developer's point of view - so do I :)

Regarding the photo viewer - I think Lightbox works very nicely on accommodation sites. It's free, and pretty easy to setup.
