The course you listed is not really targeted to web hosting. Specifically mentioning large scale, it's a really different beast than installing a simple Linux box. If you are starting from scratch, you have several months of training ahead. You'd better find a technical partner to help you get started. Making mistakes is part of the learning process and you want to minimize those when money is involved.
CentOS is arguably the most popular Linux distro for hosting. As such, any Redhat book will be helpful. You might check out the RHCSA/RHCE study guide by Michael Jang. Unfortunately there are no books that focus on Linux in hosting environments that I am aware of. There are so many applications that are unique to hosting that experience is really the only way you'll learn. If there are any hosting companies in your area, you might try to get a Level 1 tech job with them and learn the ropes. You'll need to have firm knowledge of DNS, Apache, MySQL and mail. Most of your customer's issues will involve one of those.
