there is no least amount of pages. it depends on how much competition there is for that keyword you want to rank. Then the next factor is how many quality backlinks you have to that single webpage. Unless of course you already have an authority site.
Right, there was no such amount limitation for ranking purpose though more pages would help you get a better link popularity. There is no minimum of page amount to have a good SEO. Your site can get a good rank even with a one page content. However, the more unique content pages, the more chance for being ranked in long-tail keywords.
I have seen ONE page websites rank first on google, to see an example search google for "painting services Norwich" and the first natural listing under the map is just that with no PageRank i may add or link building.
It doesn't actually matter. It can be a single page or even 100 pages make sure you have as many back links as possible

No, you dont need a certain number of pages, although in many cases you are likely to have several as default anyway, privacy policy, about, contact etc.
I did a one page website for a client who was not up against much in keyword competition and it got to the top in a month and has stayed there. Possibly, however, if your site is on the same theme as hundreds of other sites, you may need additional pages to give the unique content?????
