Using: https://adwords.google.com/select/KeywordToolExternal

If a keyword for my niche as low "Advertiser Competition" and high "Approx Avg Search Volume".

Does this mean if I target these keywords I will be able to get top ranks easier and get lots of traffic at the same time?

Yes you target the those keywords the competition is less and searches is more.

Whats a good number of searchs monthly to work with? I am going to be adding revelent content with these low competition keywords. What number is a good one to work with?

#1st position in Google you'll receive 40% of overall search traffic by the keyword.

I am not selling anything. I am targetting traffic to my site as it is a none profit site on a subject I love.
