I'm seeing if there are any software packages that can analyse my site for me and tell me how to optimise it for search engines and also maybe have other functions that it can do for off-site optimisation, etc.

Well, any software is free to try. Once you get some skills using it - then why not starting to pay for a quality product + useful support, especially considering how much you can make ;)

Theres no tool which can help you to rank.
Tools can only tell you how you are going, but at the end, you have do all the work.

Tools can be very helpful to give you basic guidance, eg checking titles are unique, checking keyword density.

I used WebPositionGold in the past and liked it - but now do it all manually.

The truth of life is: you don't need any software to optimize your website, actually. You may need some to track the results, but there is no software that do all the work for you, unfortunately. The correct path is to start gaining knowledge from blogs, forums (including this one) and your own trials and put that experience onto your efforts in promotion. Or you can hire some SEO guy :)

I don't want a robot changing the oil in my car or performing heart surgery on me. And I don't want some mindless software that doesn't understance nuance to "optimize" my site.

I saw SEO Studio awhile ago and I wasn't impressed actually. I'm not saying it was bad, no. It was..hmmm.. strange piece of software. For instance, it was trying to create shortcuts in my Start menu on every start up, ignoring all my efforts to structurize this menu :) I guess this is the case costa580 tell about - software that is too "smart".

SEO is manual in any case, what matters is what tools you use.

The comparison does not hold. There is NO software that will do SEO for you. No such thing as entering your URL and pressing the button "Improve SERP position!" :D Software helps you check various ranking factors, see what others do to rank high, analyze your page in terms of onpage optimization - useful stuff gathered in one place, he?

To correct your comparison - it's not a robot performing surgery, but a doctor using sharp scalpels and electronic precision tools. :)
