I am just curious...I see everyone using it and am thinking of building out my next site in Joomla. Is it completely stable? Has anyone had an "Major" issues with it?

It is stable. They just recently came out with version 1.5 stable. I've been using joomla for couple of sites for a year or so and have had no major problems.

    Good Luck

Yes, it is. It is being constantly upgraded. Joomla also has a strong support community at forum.joomla.org.

I think the support forum is great and the third party addon aka the extension for Joomla! is constantly being develop so I think should be ok to try it out. I use Joomla! and so far it has been great.

yeah they are stable, however some sites become unstable because of pre releases components that are installed into their sites, so i recommend checking your components publisher sites for updates for releases of security patches.

Emm well 1.5 also quite good, it is far more superior than 1.0.X but it is not mature enough so you won't find the 3rd party extension as extensive as the 1.0.x, I love using the 1.5.x and the in-built feature is already can be use to get your site going...

I've been using it for a couple of years on 4 different sites... has always performed perfectly for me... Soon I'll be giving the new version 1.5 a shot and see how that is... but the 1.0.x versions are quite stable...

..when you start playing around with 1.5 you would see that it is still in its early stages where everything is just.. just coming around to become a great product, I like the authentication feature where you can just use your gmail account to login as a user.. I guess once all the bridges for forums, galleries are establish then you can plan/do the switch over..
