    Between the two... go for the iPad. I have a new laptop / tablet hybrid running Windows 8 and I am not a fan at all... the "Metro" interface is very childish / cheesy. Seems like a poor attempt to emulate Android at times.

    Is it possible on the tablet, the way it is on a laptop or desktop, to set "desktop" as the default?

    The iPad is by far the best tablet on the market. You get what you pay for with the iPad. I've played with all the Android tablets, the Microsoft Surface but none can really compare with all that the iPad and what it offers. The surface had the chance but they did it royally wrong with the MetroUI.
