Well, difficult poll, as I love them all, but as I'm a French chef (retired, basically), had to nod to my former mother-cuisine...that said, as a kid, I cooked in all of these cuisines in a weekly "international" night, to include a full seder catered for a family, and went from there...some of my cooking today: Pan-roasted red grouper with blood orange sauce, confit of winter root vegetables, caramelized baby chard, thyme oil. Seared Ahi tuna loin "au poivre" with sherry-roast garlic sauce, braised spinach, shoestring tates. "Autumn trio" of three Spanish quail, stuffed with fall fruits, a cognac-quail jus, Tuscan kale. Braised lamb shank, flageolet bean cassoulet, jus.
'kay, one more: Grilled halibut, pommes anna, provençale vegetables (ratatouille), red pepper reduction, basil oil, nicoise olive essence.
Gosh northpointaiki, I'm still hours away from dinner and you post that... ... you have no right!!!!!
For me, it has to be Italian food because I also looking cooking it. Fried Baccalà - Appetizer. Spaghetti Carbonara - First Course. Veal Roast with Aromatic Herbs and Potatoes - Main Course. Last but not least, Cacao Biscuits - Dessert. KP

I do enjoy Lebanese food quite a bit - can't remember the name of it, but a fantastic place in Dearborn, MI introduced me to it.... Looks like you're being virtually fed by many cuisines!
