Inanchor and intitle commands are suddenly giving bizzare results - help needed

Ok, so today as usual I start checking competition for my keywords. I use a system that seems to be the most effective for checking how many people are optimizing for a specific keyword -
I check the keyword for allinanchor and allintitle results. Basically if others are optimizing for that keyword, the keyword usually appears in their title and in the anchor text of incoming links to that site... and that also seems to be what Google is looking for.

Today I started checking inanchor and intitle for some new keywords and I notice they're higher than usual (the keywords I was checking really didn't seem to be that popular at first glance so I was surprised at the big numbers)
Then I recheck some old keywords and suddenly see that basically ALL the inanchor and intitle results that I've checked in the past for those keywords (and I've checked competition for a lot of keywords) have changed! Where inanchor was 3 just a week ago, Google now reports an inanchor of 120000!!!
If this is true, a lot of keywords that I've deemed profitable due to low competition (based on the low inanchor and intitle results just a week or two ago) are now suddenly worthless
I've posted this on other seo related forums, but nobody seems to know the answer.

    How is this possible?
    Please advise.

For a detailed explanation of what I mean by checking inanchor and intitle results, you can check here:
