If I set up a website that asked for donations to keep the site up and running, what would I need in order to do so? A merchant account, paypal, etc, etc? I'm new to 'donations' and was curious what was the easiest method to set up. Thanks!

Awesome, and I can find it at paypal I assume? Also, would I need to register this with anyone considering that I'm taking donations, although it will clearly be outlined that this is simply a 'helping us out' donation.

Try HooPay or Moneybookers, they accept donations and run excellent. The problem with Moneybookers is that you are required to send few documents to identify your donation society. If you haven't it, your application will be rejected and if you use it without permission your account will be blocked :(
HooPay has got a section where you can create instant buttons to add easily in your website even you can add an API signature to prevent spoofing in your site. Also you don't need to identify your society.
    Cheers

Use paypal , its easy way to create a button there and paste the codes to your website.
It will be better if you use business or merchant account.
