I launched a site about 2-3 months ago. I just work in SEO with it. First time I checked, it was 160ish on G for a particular keyphrase. 2 weeks after, I checked it at 115 and 2 weeks after that again it was in the 60's... 2 days ago...boomm...vanished, gone...not even in the 500's What happened??

give it a while, sometimes sites dissappear for a week and then come back. It is the riddle that is google.
happens often for a new site, especially when G is updating. Otherwise, it could be some sort of penalty. Make sure you avoid risky SEO.
dont worry as your site is new so it will take some time to get stable ranking.just try to get more quality links and keep your content fresh. do some directory submission so u will have some oneway links.
It is normal for that to happen in Google, Manage your keywords properly then after a couple of months, your site would go on top
First thing is that the results need time to get stable. The second thing is keyword that you are pushing up. If it is popular one, it is possible to get filter on this keyword if you make to agressive strategy.
Have you check those keyword on all datacenter? Maybe you see the rankings in other rankings. I think it's normal to experience that one day it gone and the next day it's on top again.
As what you noticed in previous rankings, your keyword hasn't settled yet so it's not surprising that it could bounce from time to time. Yes, agree with Janna, your keyword ranking may be high in my place, not so high in your end just because we don't use the same data centre. Ranking is especially different if we deal with local search. I won't worry too much about it. What's important is that you got your pages ranked already (albeit missing in the last check). If your page isn't visible within the next week, then dig further to the problem. Otherwise, do what you can in order to improve your site: content, linking, etc.
your site i guess is very young to get a stable ranking. young sites play bounce on google. i have seen that a couple of times on my sites as well. just work on your site and SEO is a long term work.
