My domain name and e-mail services are hosted with a registar but I want to have my actual website on a different web host. I know as soon as I change the name servers to the webhost name servers my e-mail service will no longer work....how do I fix this...or can't I? I'm thinking it has to do with perhaps editing the mx records on my webhost cpanel but what would I put there?

You have two options to accomplish it.

[1] Use your host's nameservers and setup MX record in their hosting control panel. To avoid downtime in email, first setup the MX record and after few hours change the nameservers.

[2] Use the nameservers of your registrar and add A record pointing to your web hosting server.

You can figure out this by looking at your existing MX records. http://intodns.com

Just a pointer, if you set your MX records to another host, and the initial host goes down (the one serving the DNS records), email won't be received during that time except for mail servers that have cached the IP.
