I don't think you can do anything about it.. its automated, and that's what google crawled in your site..

I don't see any problem with that anyway. It just shows that your site is an active site and you update regularly. No prob.

You can have data removed from Google, but it is a long and drawn out process. You have to have a formal request-it's a pain and I doubt it is worth it for your situation.

Dude I got the same problem as you on my blog, I also got the date on my homepage snippet. I don't mind the date on my post pages but when it appears on the homepage snippet it makes your site look outdated because it only updates when Google chache's your site. And then the biggest problem is with the SERP because every time that date changes Google will rerank your homepage, I could've had top ranking for my homepage but everytime the date changes it brings down my serp. On the other hand I have top positions for my homepage on Yahoo & MSN.

I tried looking for ways to remove the date in the homepage snippet but I found nothing as of yet.

As far as I know, that can not be removed or altered as that's controlled by Google.

That's not a big issue. Look like they picked one of your latest post date. So this problem will get fixed when you add some more content to your blog and once Google bot crawl that content. Hope this will help you
