if you are using oscommerce then You need to install the Header Tags Controller and Ultimate SEO contributions, those 2 will give you unique page titles and descriptions as well as static, keyword-loaded html pages, after that create a sitemap and submit it to google.
usually same as optimizing other site.. its just there some that you have to consider... first of all you have to analyze the site before you start the optimization.. important to know what technique that you are going to use... and for selecting kws,description, and title = its important to do kws/keyphrase research, you have to consider the number of competitors and number of people who search for those kws for month or days...
