How to make my system to use UTF-8 instead of Unicode as default

    Question is simple as it is.. but still doubt if thats perfect category to post that.. anyway.. am looking for help.. so how to make my system to use UTF-8 instead of Unicode as default, whenever i try to "save" my text document files ? Or anyone know any good software which can do that all ?
