some registar give your right to manage domain. change record A or change dns even change admin email etc...

how to see who is the owner of a domain? only proof is admin email address, right? if yes, if someone(even registar) know my password and change my email. so the domain do not belong to me,right?

Well, when you usually buy the domain there is an owner section, like here:

    http://www.dnsstuff.com/tools/whois.ch?&ip=digitalpoint.com

It says owner: Digital Point Solutions

If your name its there, and you can tell them the CC number you used to buy it, so it is possible to recover your domain.

I know a person that went trough a situation like that one and emailed the registrar, explained the situation, and was able to recover all his domains.

    zulguru,

Whomever is listed as the 'registrant' owns that domain. If the registrar or host has themselves set as it they own it.
