Well, there's always the command 'top' to run while you have shell access. I use 'top' occasionally and I also use /server-status/ to give me the output for apache. There are other utlities like phpSysInformation (which can be found on sf.net) which gives you more detailed information. Worth checking out.
I saw another application you may want to look at, something we recently installed. a program called 'mytop', if you're using MySQL it is worth looking at it.
