Clickbank is better than Amazon. I also suggest you find a product that you have experience/knowledge with and something you are passionate about. You would enjoy more writing review, article, and etc. for it. Maybe start with eBook and something digital.
Consider this option. Buy a script or make one that support a lot of affiliate links. Join as much programs as you can, place them on your site and promote the site. See what is making YOU money. Start paying attention to those products and promote them hardly.
There are many eBay and Amazon affiliates that you never even touch any product. They will simply drop ship and many will do a blind drop ship with only your packing list enclosed!
I used to work for an affiliate program that sold brand name watches and to be quite honest there is not that much of a demographic for this product. I have made and am making a lot more money with other niches. Check out other affiliate programs there are a lot better options out there!
Everything can sell in the market, i may suggest you use Google Trend , Google Insight , Google Keywords Tool to check what most hot keywords that people looking for and what people search for. Sell the related product would be the best product which have large market . It only you how to start to target the business. Everything can sell online, just where you able to find your niche market only.
You need find the answers from the persons , yes , you can make a survey to find what people need more !
If its the niche of watches you are looking at then try a particular niche within watches eg "rolex watches" to sell. As has been mentioned you can sell these on without having to handle and even though the commission rate as a percentage on amazon is fairly low, if you focus on the higher priced watches you can still get a fairly decent commission on the sale.....

Before you get into "physical" products I think it would be easier and less of an headache to sell "digital" products.
