It comes really worst when you have 100's of products or sometimes few thousands....

To do SEO of E-Commerce websites you must have Meta Tags filled with information like <title>, <description>, <keywords> meta tags specially....

Then if possible... Give some information about products in the site and then check for image alt tags, if they are not present add them....

This will help Bots to crawl your site better and search engine will get the idea of what is going-on, on your site....

Remember to not over optimize the website such as keyword stuffing etc....

When you mean dynamic do you mean that the website urls change when a query is submitted?

Title meta tags for every page even for dynamic pages design them as they fit on every query for your website. If the urls are generated dynamically upon the search queries, i would suggest you to keep more focus on your home page keywords and promoting it for those keywords plus make your website indexing fast.

Its really hard to seo a dynamic site if there's no built in tool to generate meta tags.
However, you can try adding microdata for a better looking listing and thus generate trust of consumers.

Place links to your dynamic pages on your static pages, and submit your static pages to the search engines manually according to each search engine’s guidelines. This is easily done with a Table of Contents page that displays links to dynamic pages. The search engines will index most of the content.

Optimization for a “dynamic” webpage is very different from the optimization of conventional “static” webpages. A dynamic page does not actually exist but is triggered by server side when a user clicks.
ASP,PERL and PHP are some of the server side programs used to write dynamic pages.
In order to enable search engines to index dynamic webpages
-Create subsequent static pages and place links to the dynamic pages on the static pages
-A Sitemap that fully displays all the links to the dynamic pages across the web site.

This is important because as a search engine optimizer we need as much content to be found and indexed as possible. In general, larger sites outperform smaller ones. Therefore we want all that content to be found and indexed as it all has an impact on how the site will perform on the search engines. For one, every single page indexed increases the chance of a visitor coming the site. That is because every single page can potentially be ranked for any combination of keywords found on that page. If you have a 400 word page, how many keyword combinations do you think that works out to? Now multiply that by 1,000 or 10,000 or even 100,000 pages. Now how many potential keyword combinations do you think there are?The second most important reason for having all those pages indexed is because they can influence your link popularity. The search engines today are driven by link popularity. At it's most basic form link popularity equates to the number of links a site has. The site with the most links can rank higher than the site with fewer links. That means the more pages you have indexed (all presumably with links elsewhere on the site including the home page) the more internal link popularity that site has. Not only that, but more pages also increases the chances of other sites linking to your site via those pages. For example, let's say you are the only site on the web selling blue widgets. By offering a good static URL to the search engines, an opportunity is created whereby other sites that support blue widgets would link to your blue widgets pages. This then increases the site's overall link popularity.
