Have you contacted GoDaddy Support? They should be able to help you out with all these questions. Using DP as a support desk probably isn't the best idea, when none of us here can help you with GoDaddy account-related issues. I'm pretty certain GoDaddy does not allow more than one site, but you'll need to check with them.

Every hosting company is different. Some charge for cPanel, others don't offer it and some even bundle it into the package or you can add it for a small fee. If you are familiar with a particular control panel and want to continue to use it then you should check with your host before you purchase a plan. Anytime you have an issue with your hosting provider call and ask them. Quality hosts can make short work of questions like these which you have proposed.
Since I was offered a job at GoDaddy, I can help a little bit from the knowledge I was given about GoDaddy. With Godaddy, they use their own hosting panel. They have different plans but most are only for a single domain to be hosted. You cant easily add addon domains as you could with cPanel. To be honest, I would transfer away from GoDaddy and stick with a regular cPanel based hosting provider. cPanel is not only quicker, but its more efficient and user friendly compared to GoDaddy.
Go Daddy shared web hosting will not likely support ffmpeg, since most shared hosting providers disable it. As for cPanel, you may have issues creating background processes which I'm surprised nobody on here picked up on- you just cannot fork the email server, web server, or any cPanel software from the shared web hosting account.
