I have a domain in Godaddy and I want to edit DNS records to meet following reqirements.

MX records must be pointed to use google apps. ( I can get these settings from Google)
Nameservers must be set to my web host (Web hosting is done by a web host outside from the domain registrar)

Is it possible to do these things with following registrars?
    1. GoDaddy 2. Namecheap 3. 1&1

If it is possible how to do it?

I tried to do these things in my Godaddy account using DNS manager but there are no domains to select to edit DNS records in the list.
Also I tried them to do in 1&1 but once I edit the MX records domain's name servers automatically changes to 1&1 name servers which I don't expected. :(

Need your help to solve this problem. Thanks in advance.
