I have a couple of sites which i'm using in my niche and have found a couple of additional domain names with good keywords in the names. Anyone know how I could best use these (if I bought them), to drive traffic to exisiting sites without having to transfer all content onto new domains?

Yes, that is the concept. Put them on a different hosting service. Or, while you are waiting to decide what to do with them, you can park them with Google's parking service and Google will pop Adsense on them. You could make a few bucks that way. At least enough to pay for the domain. If they are actually good keyword domains you may even make more cash from the Adsense.
If you want to redirect the domain, look up "CNAME redirect". I don't know if that is a good idea. I don't know whether Google will notice the redirect or if Google will think that you have the same content on two sites. It might be a good idea for people who are looking for your info with those other keywords.
Google will likely just index the main page that you redirect to, but that can be an ok thing if you just want to draw more organic traffic.
I use similar domain names that I purchase to redirect to the original. For instance in my sig files and article resource boxes
