How many page views / visits to a sales pitch page does it take you to typically convert one ebook sale if your traffic is targeted to a specific subject? Example: 100 visits to 1 sale?

Pal, it all depends upon the niche your product is in and the way you design your landing page. The Conversion rate (sale per 100 visits) can go all the way from 0.2% to even 5% according to the niche. There may be a niche where you get %5 Conversion rate and there may also be a niche where your product doesn't sell at all.
Plus the way you design your landing page is very important. Contact me if you really are interested in increasing your conversion rate.

It fully depends on your source of traffic, and the type of visitors.

If i am selling an ebook on how to make homemade knitted beanies, if try to sell it off a proxy site, you don't get any sales what so ever (if you did, it was probley a freak accident lol).

Now, if had a blog about woodworking tools, and you where selling an ebook about mainting your tools, and making them last longer, i would expect a good 5-10% conversion rate on the clicks....

The more targeted you can make your visitors, the higher your conversion is.

Exactly. You can be getting targeted traffic, but your landing page may not be doing a good enough job of persuading prospects to buy. I've seen lots of people post that they're getting traffic and making no sales, then when they post a link to their site, it's poorly constructed and doesn't grab your attention. (not saying that's the case with you, but it happens.)

It all depends on your traffic sources and the types of traffics. If your traffic is very targeted, your conversion rate will be higher and can go up to 10%.

If you have a good site, your price is right, and whatnot, above average is around 3%. Rarely does it exceed 5%, unless the price is so low, it is a steal, which a webmaster wouldn't make much money anyway.

THAT is the reality of it.

Anybody who tells you different is some clueless noob who is just spouting shit.

Count on a half to one percent when starting out, if that. That will be average.

There is no really set conversion when it comes to selling products. Try and get the best product you can and go with that. The more traffic you have the better chance you will make a sale. Good Luck.

Test, test, and test again. First make sure you are receiving some decent TARGETTED traffic, then start testing your landing page, checkout process, etc. Sometimes the smallest change can increase conversions for you. It's all about testing until you find what works best.

However, just remember If you're traffic is not targetted, you can forget about making any sales

    How is your e-book priced?

One sale per hundred visits ( targetted traffic) isn't certainly bad to start out with.

Well, I have a friend that could package dirt and sell it, and make you come back for another month's supply, so I'm pretty sure quality of traffic and product play a role, but good marketing makes a huge difference in conversion.

The main thing is your WEBSITE, where you're selling. If you're selling in a useless niche website and a poor landing page, your sales won't be soaring. Try to build a perfect sales page and give them few bonuses also like free e-books, etc, you'll get good sales.
