How hard it is to outrank wikipedia, about.com, ehow, etc on low-compeition keywords?

Days ago I've came up with a list of low-competition keywords that the top 5 results are either wikipedia, about.com, ehow or similar sites.

Thing is, the result after the top 5 are all non-SEO optimized sites. So my question is, should I tackle on these keywords/will I have a chance on outranking wiki/ehow?

    Thanks for all inputs.

make sure your content is more relevant then for example wiki.... combined with some good seo and you WILL outrank ehow or wiki

about.com is a pretty tough nut to crack, ehow.com doesn't have as much authority as about.com the thing is though, you can always target different long tail keywords, the big sites don't have the resources to target them all, and if you really work hard on one main keyword you can eventually outrank them.
