Any niche is better than "make money on the internet" or any non-tangible products. The simple reason is that everybody seems to be starting in this niche, totally overcrowded and preselling is tough. I'd recommend tangible goods instead, by far easier and more profitable.
I do not understand the question. Optimizing your site for search engines is the same for any niche. You pick your keywords, you tweak your meta description, tweak your articles, and so on. Regardless of the niche, the process is the same. Or, are you getting SEO and ranking in the search engines mixed up? There is a difference between SERP - Search Engine Results Pages and SEO - Search engine Optimization.
well if everybody is starting in this niche then there probably doing a half ass job, im gonna actually give proper content and work hard and make a proper site with proper products and content.
Sure with hard work and patience anything is possible. What I was making doesn't matter because it sounds like you will be monetizing your website differently. I used the website for my SEO business. People saw me ranking very high for an extremely competitive keyword and wanted to use my services.

If you aren't an expert in something, outsource. Design work is cheap nowadays and it will save you alot of headaches.
Not a niche you should be attempting for your first website. If you don't know how to make money online yourself don't try and teach others how to. So many newbies make this mistake.
SEO is the best way to market a site.You can find a lot of expert marketers who can do the SEO for you but you can actually make it by your own.
