When I do a search in Google.co.uk for 'Health Spa' - the website www.hoarcross.co.uk comes up in 7th place - but I don't see a single mention of the phrase 'Health Spa' anywhere on thier homepage. I've been trying to get up in the rankings for this term for ages but how have sites like this been able to do it with so little effort?

The word 'Health Spa' is not mentioned anywhere in their source or home page and still they stand 7th for the search 'Health Spa' may be because they have quality back links from very good sites that is related to 'Health Spa' or they would have done a lot of directory submissions in the relevant category and gained good popularity.
I'd agree, this could be due to backlinks and the anchor text that appears on the links. Have a look at it in Marketleap.com and see what the results show.
dpking got it right. There are probably hundreds of backlinks using Health Spa as the anchor text. Lesson one of SEO from Shafty:- If your getting lots of backlinks from good sites Google will be your friend. Try and get them from mass directory submissions and low worth sites and Google will shaft your site to within an inch of its life and kill your rankings
I concur. If you conduct a Google search on their backlinks, a lot of domains with the keyword "health spa" pop up. SEOQuake revealed that their backlinks are all from relevant and established domains that have a PageRank between 3 and 5.
May be some meta tags has been used to optimize this site with the work health spa. Or this site may have links in number of sites related to health spa.
Sorry to say, meta tags dont play any sort of role in your SERP's. Just to prove you can check it yourself, the site does not have meta tags.
Very simple my friend Its only and only due to backlinks with anchor text "Health Spa". Either few quality backlinks or thousands of backlinks with low PR will rise you high in serp.
