To be honest it is not professional to do business with gaps of trust involved. I real professional will easily wire in security which makes the online business more stable with efforts in any project. Trust is not something you should try to achieve working with people online. You should make it so that trust is not important, then later on naturally it will build. I have an article writer who I pay up front for any jobs but after about 6 jobs in a row with her, heck there's no "I need payment first" or anything like that. I just give the intructions and she starts writing then when I just pay as soon as I got time to pay(which is always not more than 5 hours later or so). And they are not $20 jobs either. They are $xxx jobs.
Not all your clients understand what your business system is all about. The only thing that you can show them that you are willing to help them is through support. Show them that you care about them.
