Do some research on what people are buying, needing at the moment. Try to stay away from the most competitive niches from the beginning like weight loss unless you have an established site with good traffic. It also depends on where you are going to put your offer, what website, how much traffic, and always check out the offer by searching on Google to see what people say about it. I mistakenly built a website around an offer before doing research to find out that the niche was bogus in the first place (seeing without glasses thing) Also check out CBengine.com to see what sells good and what has some good history. I love cbengine because it tells you what's been around and what has the best gravity (best sales volume) and pretty much everything else Clickbank doesn't tell you about that particular product. It's really up to you. It needs to be chosen around your marketing plan. If you're worried about competition, choose a low gravity product. Different niches can perform better with different marketing techniques, so make sure you have a plan before you just jump into it.
99.9% of clickbank products are sh*t, I was thinking about giving it a go but I can't sell something I don't believe in :-/ Suggestion for you? Sell something you can see selling and probbaly would buy yourself, you have to pre-sell your product...
Finding the right ClickBank product to promote can take a little bit of research on your part but when you do find the right balance of commission, gravity, and a great sales page, you've likely found a winning program you can promote.
Really you want to promote products with higher gravity. If more people are promoting a product that means it is converting well. People generally do not try to sell products that will not sell. The higher the gravity the chances are the higher the conversion rate.

Finding a good Clickbank product is a whole course on it's own. You got to get your research right or your in for a bad ride. Here is a basic look at it: First check the product out on Alexa or Quantcast to see if its getting traffic, if the answer is yes then you can go and check out Google with relevant keywords of the product and see if there are websites promoting the offer. If the answer is yes again, then you know there is competition and if there is competition, then there is money to be made. That's just a basic look at the process, but you get the idea. You can really go into detail and find precious keywords and products, but like I said earlier that is a whole course on it's own.
Sure there are some CB products that sell better than others, but it's all about how you market the product. I shoot for something that doesn't necessarily have the best gravity, but is an actual good product. I look for products that provide a lot of value and stand the test of time (not trendy). I totally disagree with your statement. I was selling Truth About Abs and had a best day of $1485. I had very little refunds and I felt good about the product I was selling. It's not crap at all. Mike Geary is an awesome guy and knows his stuff. Uses everything in TAB and clearly shows how to do it. I've used the program myself with awesome results. There are some other really good products too. I'll admit there is a lot of crap there, but there's a lot more good stuff than just .001%
