Now I know that Google Apps has an option for this, but I'm after something NOT owned by Google (which owns enough of my life as it is). I am looking for something cheap that allows unlimited domains to be hosted into one inbox. I will need something that allows a lot of chopping and changing - I will be hosting sites on these domains elsewhere, and selling them. Have you just thought about forwarding the emails to the correct people you want to accept them I think you should be able to create a web mail address on your server and just redirect all other email address to that one and give them a master password might be cheaper
