Hello, I found a niche/ market that may be untapped, and I need keyword research done. Only problem is, I have no idea where to start! Do I use Googles Keyword Planner or do I just search Google for content already indexed? I'm lost, please help!

try to use free tool - ultimate keyword hunter that will discover the relevant words and phrases to be used to succeed.
There is one idea I tried lately on a couple of websites and its about using Digg to find long tail keywords. There are many many users on Digg discussing about everything, so you should type in a keyword which interests you and browse through the results. Read some of the articles which interest you and keep a sharp eye for long tail keywords which you can use. Find out which ones have the highest monthly searches and choose it for your content.
Don't go too heavy with the keywords you found. Generally, you should have a good idea about your top keywords. You work around them with long tail keywords. Overworking a keyword can cause problems.
