How Do I Create On Line Video Tutorials

Hi,

I have seen video tutorials like this one (http://www.youtube.com/watch?v=V33BZdMMUBA&feature=related) where people record their tutorial narrative whilst also recording what they are doing on screen.

How do I do this?

I do agree adobe captivate is a great tool, too bad it is not available for mac...
