This depends on kind of business which you run. You can put your email address and telephone number or a form into your profile for filling. If anyone contact you, then you know it. And you can input his/ her name into your "potential customer" list.
I thought you were asking about how to measure your social media success. If you are, then you can measure it using your conversions. The more fans who make a purchase of your brand or product, the more successful you are. But if you are interested on targeting potential customers, you can do so by going only for people closely related to your brand/product/service.
It depends on your system and what you are willing to offer and what you are targeting to get. Think wisely.
I personally don't see that there is a specific way to filter out potential customers. In fact, a fan might turn potential customer over the time depending on what kind of values you have provided them over your social media sites. Continue to provide valuable and usable contents and monitor(listen) to your fans' response in the sites. Cheers!
One of the great appeals of social media to business is that it is new. Unlike older, better-traveled and exhaustively measured worlds of marketing, especially direct marketing, reaching out to customers via social media is untested, unproven and largely untried. With that in mind, at this point, I'd say success might most usefully be defined in terms of knowledge gained, rather than eyeballs, interactions or revenues added.
