History: Audit Trail or Version Numbers?

    I've got an old project that I have an audit trail of all changes recorded in a "diffs" table with the changed fields serialised (it's old, nowadays I'd use json). It's quick, universal, and easy to generate an HTML table showing what changes were made and when. If the table needs culling I can do it easily based on the date of the change.

    I've got a new project and was need history tracking and was reading an article on medium that recommended all updates be changed to inserts with a column for version. That seems good but has the potential for every table to become huge with no easy way to cull old versions.

    How are other sites managing their history or audits?
