Similar to Twitter trends, shows you what is being searched the most in a certain country/region at a real time basist. You should see Google trends update throughout the day. For example: Canada won their historic gold medal at the Winter Olympics a couple of days ago, this would have been searched/content would have been created, so Google would have seen this as a trend.
Keywords could get “obsolete†in a sense that there could be newer but related keywords that are not in your web page. Users using Google to search relevant web pages could miss your web site if they used the more recent keyword but not your keyword. So to know if your keyword is still in the trend of searched keywords, try google trends.

Personally, I just use it to know what is happening on the Internet. But sometimes, I write articles about the topics and get some traffic to my site. I usually do this when a popular topic is related to my site so that visitors tend to stay longer on my site after they read the article I wrote about the related topic. This ends up getting me Adsense clicks.
