You can create both kinds of sitemaps. One for search engines only, and one for visitors.

I placed a google sitemap and a yahoo sitemap on a website. I checked the sites pages on google and found both indexed. The page with the yahoo sitemap looked funky as it is a list of url's in text format. Is it better to remove the yahoo map and just keep the google map?

You should create sitemaps for both the search engines and for visitors.
