    So what if the PR changes after a Google update. Does the directory automatically re-categorize the site?

    No, it would not automatically re-categorize it. I'll manually move it accordingly to its appropriate category. so, even if you submit to a wrong category and it gets approved now, it will be moved to its correct PR directory later.
