Go to "Goals" -> "Set up goals and funnels" -> "Add Goal"

Then enter your goal's name and setup goal type. Assuming the checkout invoice's page is your goal page.
    e.g. some_domain_name/checkout/invoice?id=123

You can choose URL Destination as your "Goal type". Set match type to "Head Match" (by default)
Set Goal URL to be "/checkout/invoice" (do not need to put your domain name, so in this case "some_domain_name" can be ignored)
Set Goal value to your average sales per order

Then you can save Goal. Funnel setting is optional. If you need you can reply to this thread and provide me with your site's sample and I can give you some info on it.

    Cheers,
    Felix
