Getting rid of old cached website version

I recently built a new website that replaced an older version. The new version is actually ranking rather well for the keywords I need and after 2 weeks, it's already on the first page of google results.

However, I made some changes a couple of days ago and it seems like google hasn't caught up yet. I added some pages to the site and I wanted to know if google had indexed them already. The function site:www.mydomain.com revealed that google hadn't indexed the new pages and that it still "remembered" some of the old website's pages.

Is there anything I can do in order to make google "forget" about the old version website? the pages don't exist on the server anymore.

In google's webmaster tools you can force a quick removal of old pages.

I don't know however how fast they will be added again.
I suppose if you force them to be removed, and once this is done then add a new sitemap to the webmaster tools with the new pages included, they get crawled again pretty fast.. but I have not tested this myself.
