So let's say I work for a company that sells “bananasâ€. If I post in forum communities and post's that are relevant to “bananasâ€, will the link that I post up in my signature or in the body be worth more in terms of link juice than just posting to a bunch of irrelevant forum communities and threads for the sole purpose of a signature link? If so, how much more weight would it have? How about if what I post is useful content that has a lot to do with "bananas" like answering people's questions with detailed and researched answers? Is it worth it to keep up with this strategy of SEO?
Yes, any link is good. You can even post on forums relevant to "fruits" in general and gain link juice. Any link will give you link juice, the value of the link depends on the quality of the site and where the link is posted.
Those will be counted as real backlinks, all the the weight age may probably be less due to it being a forum. But you can gain a lot of links quickly here. Also, in my opinion, it doesn't matter which niche forum it is. If you post in a fruits forum you can get more referral traffic but I don't think it will give you a better SEO compared to a standard forum.
As all we know Google gives preference to two things.These are: 1.Quality. 2.Unique content. For getting quality links you have to post forum in your relevant category rather than irrelevant category it will provides you more benefits for getting backlinks and traffic.Secondly, your content must be good and unique.

But, just to clarify, the link is worth more when you post in your niche of forums because it's worth more than if you posted in a non relevant niche, right? From what I understand, the more relevant the page is to your site, the more that link will be worth. I know that the bigger and more trusted the site is to google than the links will be worth more. But let's say I post in an unrelated niche of the web that ranks really high on alexa.com. Then I post in a site ranking in around the same as the last but is more relevant to my site. Will that link be worth more, less, or the same? Please explain...
Yes such forum posting which are relevant to your theme "bananas" is more beneficial as then they would be counted as more quality links from perspective of search engines.
I do believe the link coming from a site relevant to your topic is better. At the same time the difference isn't mind blowingly large. I would take a link from an unrealted forum that has higher PR and domain age than one that was related with PR0 and made 2 months ago.

I know seocompany117c! I've done my fair share with trial and error and have been banned a few times from a couple sites. I got that the forum's you participate in have to be something you're interested in just don't be spammy, participate in conversations and be a member of the community. Don't just post for the links.
Continuing with your example of bananas, if the forum you are posting to is about bananas, any link from it to your site will almost certainly help with your SEO. If the forum is not entirely about bananas but there is a section for bananas in the forums, links from the bananas sub forum will benefit you wether signature or from contents.
